L’Apple pie non e’ altro che una torta con una farcitura di mele e cannella all’interno, ricorda un po’ lo strudel di mele (che io adoro). Gli ingredienti di questa torta sono le mele, la cannella e la base che apparentemente potrebbe sembrare una frolla, ma non lo è, perchè non ci sono le uova.
E’ ottima servita con il gelato alla vaniglia oppure alla crema o con la panna montata.
INGREDIENTI :
Per la base:
- 300 gr di farina 00
- 150 gr di burro morbido
- un pizzico di sale
- 100 gr di zucchero di canna
- 50 ml di acqua fredda
Per il ripieno:
- 3 mele grandi
- cannella q.b.
- 40 gr di zucchero
- succo di 1/2 limone
- 1 cucchiaino di fecola o zucchero a velo
PREPARAZIONE :
Io ho preparato la pasta della base nel Bimby, si può impastare a mano oppure nella planetaria, come preferite.
Mettere nel boccale tutti gli ingredienti per la base e impastare 20 sec. velocità 4 e poi 1 min. velocità spiga.
Mettere l’impasto in una ciotola in frigo coperto con la pellicola per 1/2 h circa.
Lavare, sbucciare e tagliare a tocchetti le mele e metterle all’interno di una ciotola, mescolale insieme alla fecola, al succo di limone, allo zucchero e mettere da parte
Stendere tra due strati di carta forno due pezzi di impasto gia’ riposato, uno servirà per la parte inferiore e uno per la parte superiore che coprirà il dolce sigillandolo. Quando si fa la parte sotto ricordate di aggiungere un po’ di impasto che servirà a creare uno spessore che sorreggerà la farcitura e per fare dei bordi belli alti. Bucherellare il fondo con una forchetta.
Mettere la farcitura con le mele all’ interno e coprire con l’altra parte di pasta, pizzicare i bordi in maniera tale da sigillarli bene.
Con un coltello fare 4 taglietti piccoli in superficie, in questo modo tutta l’umida interna in eccesso evaporerà. Spolverizzare con una manciata di zucchero di canna.
Cuocere a 180° per 35-40 min. in maniera tale da essere ben cotta dentro e dorata fuori. Lasciar raffreddare a temperatura ambiente e poi tagliare a fette e servire.

- For the pastry:

255g/9oz plain flour

140g/5oz hard margarine or butter

6 tsp cold water

3 large Bramley cooking apples, chopped, stewed and cooled

sugar, to taste

caster sugar

cinnamon

PREPARATION:
Preheat the oven to 200C/400F. Sieve the flour and salt into a bowl. Rub in the margarine or butter until the mixture resembles fine breadcrumbs.
Add the cold water to the flour mixture. Mix the water into the flour, using your hand to firm up the mixture. The pastry should be of an even colour and suitable consistency for rolling. Divide the pastry into two halves. Take one half and roll it out so that it is big enough to cover a 20cm/8in mold of cake.
Trim the edges with a knife using the edge of the plate as your guide. Cover the pastry with the sliced apples, sprinkle with sugar to taste and cinnamon. Roll out the other half of the pastry. Moisten the edge of the bottom layer of pastry and place the second piece on top. Press down on the pastry edges, making sure that they are properly sealed. Trim off any excess pastry with a knife in a downward motion, again using the plate as your guide. Flute the edges with a pinching action using your fingers and thumb. Prick the surface of the pastry lightly before placing the pie in the oven.
Cook for 20-30 minutes. Dust with caster sugar and serve.
