Il burro di arachidi è una preparazione alimentare a base di semi di arachidi macinate che possiamo tranquillamente preparare in casa, senza spendere troppo e ottenendo un prodotto sano rispetto a quello comprato.
“Il burro di arachidi è un alimento iperlipidico ed ipercalorico; ciò significa che quando lo si assume per sfizio – magari al posto del cioccolato da spalmare come leccornia a fine pasto – non fa certo bene a linea e salute. Questo a causa della combinazione di più elementi sfavorevoli, come la piccola quota di grassi idrogenati, l’elevato apporto calorico e il buon contenuto in acido palmitico (un acido grasso saturoaterogeno). Non sussistono quindi ragioni particolari per consigliare l’assunzione regolare di burro d’arachidi; se piace, si può mangiare tranquillamente, senza comunque esagerare e senza dimenticare il suo elevato potere calorico.

INGREDIENTI:
- 400 g di arachidi.
- 7 ml di olio di arachidi o altro olio vegetale (facoltativo).
- 1/2 cucchiaio di zucchero (facoltativo).
- 7 ml di melassa, miele o 10 g di zucchero di canna (facoltativo).
- Pizzico di sale (facoltativo).
Ricetta per circa 350 ml di burro di arachidi
PREPARAZIONE:
Potete usare le arachidi salate già senza guscio, oppure comprare quelle con il guscio e armandosi di pazienza aprirle..
Io ho optato per la prima opzione, più rapida.
Lavorate le arachidi nel frullatore finché saranno tritate. Saranno necessari solo pochi impulsi.
Frullate le noccioline per un minuto. La loro consistenza comincerà a diventare cremosa e più simile al burro.
Se necessario, raschiate le noccioline dalle pareti del bicchiere del frullatore e portatele verso le lame. Continuate a lavorare la miscela per un altro minuto, procedete in questo modo finché ottieni la consistenza che desiderate. Dovrebbero essere sufficienti tre minuti al massimo. Ricordate che un burro di noccioline casalingo non avrà mai l’aspetto cremoso di quelli commerciali. Questo perché è naturale e non contiene grassi aggiunti, ma sarà altrettanto delizioso!
(Io a questo punto ho aggiunto un filo di olio di arachidi, per renderlo più cremoso, ho frullato ancora un minuto,per amalgamare la crema.)
Aggiungere sale o zucchero a piacere (io ho aggiunto un po’ di miele,per contrastare il salato delle arachidi). Assaggiate il burro e valutate se mettere altro sale o zucchero. Se il sapore naturale vi piace così com’è non c’è bisogno di altre aggiunte!
Alcuni frullano questi ingredienti con le noccioline per ottenere un prodotto omogeneo (io ho frullato il tutto); tutto dipende dal modello dell’elettrodomestico, non tutti sono in grado di lavorare bene il miele, lo zucchero o la melassa. Se decidete di aggiungere questi ingredienti a mano, allora mescolate con cura per incorporarli.
Travasate il burro in un contenitore ermetico. Conservatelo in frigo per un giorno o due così potrà stabilizzarsi e diventare la gustosa crema di arachidi che amate. Ricordate che la vita di un prodotto casalingo è decisamente ridotta, dato che non ci sono conservanti, ma molto probabilmente finirà prima ancora di rovinarsi!
Potete conservare questa preparazione in frigorifero per poche settimane.

INGREDIENTS:

- 1/2 tablespoon sugar (optional).
- 7 ml of molasses, honey or 10 g of cane sugar (optional).
- Pinch of salt (optional).
- Recipe for about 350 ml of peanut butter
PREPARATION:
You can use the already salted peanuts without shells, or buy those with the shell and arming of patience open them ..
I opted for the first option, the fastest.
Processed peanuts in a blender until they are finely chopped. It will take only a few pulses.
Whisk the peanuts for a minute. Their texture will begin to become creamy and more like butter.
If necessary, scrape the peanuts from the sides of the blender jar and bring them to the blades. Continue to work the mixture for another minute, do this until you get the consistency you want. Should be sufficient three minutes at most. Remember that a peanut butter home will never have the creamy appearance than commercial. This is because it is natural and contains no added fat, but it will be just as delicious!
(I at this point I added a drizzle of peanut oil, to make it creamier, I shake for a minute, to mix the cream.)
Add salt or sugar to taste (I added a little ‘honey, to counter the salty peanuts). Taste the butter and evaluated whether to put more salt or sugar. If you like the natural flavor as it is there is no need of other additions!
Some blending these ingredients with the peanuts to obtain a homogeneous (I shake it all); everything depends on the model of the appliance, not everyone is able to work well honey, sugar or molasses. If you decide to add these ingredients by hand, then mix well to incorporate.
Decanted butter in an airtight container. Keep it in the fridge for a day or two so he can stabilize and become a tasty peanut cream you love. Remember that the life of a homemade product is very low, given that there are no preservatives, but most likely will end before they spoil!
You can save this preparation in the refrigerator for a few weeks.
