Capita a tutti, spesso che in cucina ci ritroviamo con degli avanzi, cosa fare in questo caso? Semplice, basta inventarsi qualcosa per utilizzarli, che sia una ricetta semplice, come questa, o più complessa…tutto è consentito!
Mi erano avanzati degli albumi della torta incanto, avevo degli spinaci cucinati per la sera… Cosa fare? Beh.. degli spumosi, soffici muffin, deliziosi come antipasto o piatto principale.
Quindi eccovi una ricetta veloce, sfiziosa e davvero buona!
INGREDIENTI:
Non ci sono ingredienti precisi, ma se volete riprodurre quelli che ho fatto io, vi occorrerà:
- Albumi ( io ne avevo 4)
- Spinaci ( non erano molti, ma bastavano per 6 muffin)
- Prosciutto cotto ( 6 fette, 1 per muffin)
- Formaggio grattuggiato
- Sale
- Formaggio a dadini ( non tantissimo, diciamo un cubetto per muffin, io ho utilizzato del provolone)
PREPARAZIONE:
Sbattere in una ciotola gli albumi con una forchetta, senza montarli troppo, aggiungere un po’ di sale, del parmigiano, mescolare ancora un minuto e il gioco è fatto.
In uno stampo per muffin, io ho utilizzato uno stampo in silicone, così non ho dovuto ungerlo, mettere una fetta di prosciutto in ognuna delle cavità, in modo che si formi una specie di “contenitore” , aggiungere gli spinaci, la giusta quantità perche’ poi ci andranno gli albumi, il cubetto di formaggio e infine gli albumi. Ho spolverato la superficie con un po’ di parmigiano, giusto per creare quella deliziosa crosticina croccante, ed ecco i nostri muffin pronti per il forno.
Infornare a 150° C , il tempo di cottura varia in base al forno, saranno pronti nel momento in cui saranno belli gonfi e spumosi.

I had advanced the egg whites cake charm, I had spinach cooked for the evening … What to do? Well .. the fluffy, soft muffins, delicious as an appetizer or main dish.
So here’s a quick recipe, tasty and really good!
INGREDIENTS:
There are no exact ingredients, but if you want to play what I’ve done, you will need:
- Egg whites (I was only 4)
- Spinach (there were not many, but enough for 6 muffins)
- Cooked ham (6 slices, 1 for muffin)
- Grated cheese
- Salt
- Diced cheese (not much, say a cube for muffins, I used provolone)
PREPARATION:
Whisk the egg whites in a bowl with a fork, without mounting them too much, add a little salt, Parmesan, stir for a minute and you’re done.
In a muffin mold, I used a silicone mold, so I have not had to anoint, put a slice of ham on each of the cavity, so that it forms a kind of “container”, add the spinach, the right amount because then there will be whites, the cube of cheese and finally the egg whites. I dusted the surface with a little Parmesan cheese, just to create that delicious crispy crust, and here are our muffins ready for the oven.
Bake at 150 ° C, the cooking time varies depending on the oven, will be ready when they are beautiful puffy and fluffy.
