L’angel cake è un dolce molto soffice appartenente alla tradizione culinaria americana. L’angel cake è molto deliziosa, anche perché si può farcire come si vuole. Molto soffice segue un procedimento di lavorazione particolare e necessita di una teglia apposita. ( anche se io ho utilizzato uno stampo classico in alluminio per ciambella ). L’Angel Cake è una torta leggerissima, una consistenza che ricorda un marshmallow. A metà strada tra una meringa e un pan di spagna, è la torta dei senza (senza burro, senza olio e senza tuorli) ma a cui non manca proprio nulla per essere perfetta, leggi gli ingredienti e gridi al miracolo.
INGREDIENTI :
- 12 albumi
- 1 cucchiaino di cremor tartaro (non sostituitelo con il lievito, lo si trova in qualche supermercato o in qualche drogheria che ve lo vende a peso)
- 150 gr di zucchero
- 1 cucchiaino di estratto di vaniglia ( io ho usato una fialetta di aroma )
- 135 gr di farina
PREPARAZIONE :
Mettere gli albumi e il cremor tartaro nella planetaria e iniziate a lavorarli per montarli (oppure in una ciotola capiente se li lavorate con un frullino)
Aggiungere 170 gr di zucchero, 2 cucchiai alla volta, continuando a sbattere bene. Gli albumi devono risultare ben montati e lucidi
Unire la vaniglia e continuate a sbattere
A parte, setacciare un paio di volte la farina.
Unire la farina e lo zucchero agli albumi, setacciando nuovamente e mescolare con una spatola per incorporarli.
Versare il composto in uno stampo non imburrato, nè oliato, nè coperto da carta forno.
Livellare bene la superficie. Mettere in forno già caldo a 180 gradi per 40 minuti circa.
Verificare la cottura con uno stuzzicadenti.
Una volta pronta, togliere la torta dal forno e farla raffreddare capovolta.
Una volta fredda, far passare un coltello lungo i bordi e poi sformare la torta.
Servirla al naturale, con della glassa al cioccolato o con del curd ai lamponi o al limone.
Note : Per uno stampo da 18 cm usare 8 o 9 albumi a seconda di quanto sono grandi le uova e riproporzionare gli altri ingredienti.

- 135 grams of flour
PREPARATION:
Put the egg whites and cream of tartar in the mixer and started to work on them to mount (or in a large bowl if you are working with a an electric whisk)
Add 170 grams of sugar, 2 tablespoons at a time, continuing to beat well. The egg whites should be well mounted and polished
Add the vanilla and continue beating
Separately, sift the flour a couple of times .
Combine flour and sugar to the egg whites, sifting again and mix with a spatula to incorporate .
Pour the mixture into a buttered mold is not, nor oiled , or covered with parchment paper .
Level the surface. Put in a preheated oven at 180 degrees for about 40 minutes.
Check the area with a toothpick .
Once ready, remove the cake from the oven and let it cool upside down.
Once cool, run a knife along the edges and then unmold the cake.
Serve natural, with the chocolate icing or with the raspberry or lemon curd .
Notes: For a mold of 18 cm, use egg whites until 8 or 9 depending on how big are the eggs and readjust the other ingredients
